I have an undying love affair with pasta. Pasta for me is the ultimate comfort food, Pasta is one of those popular foods that can be made in a variety of ways. Because of its versatility, there’s a pasta dish for everyone out there from lasagna to ziti and from ravioli to linguine.
I’m at m happiest when a bowl of pasta al dente is in my presence.
Growing up in the Philippines and being a Filipino, sometimes how I wished I am an Italian, I am I must say in-love or obsessed with anything Italian. I can’t explain the needs of eating pasta 2x a week or I can’t go a week without making pasta, especially now that I can make my own pasta. The joy of kneading the dough, passing it through the pasta machine and making all sort of shapes of pasta is an absolute pleasure.

Tuna Spaghetti with ZucchiniPrint Recipe
- 5 tablespoons extra virgin olive oil
- 1 can anchovis finely chopped
- 1 cup black olives roughly chopped
- half chili finely chopped
- 1/2 cup capers
- 1 zucchini—diced
- 5 cloves garlic—finely chopped
- 28 oz (800g) canned chopped tomatoes
- 2 teaspoons salt
- ½ teaspoon freshly ground black pepper
- 14 oz (400g) spaghetti or linguine
- 12 oz (340g) canned tuna in olive oil—drained and broken into chunks
- 3 tablespoons finely chopped fresh basil
- Finely grated Parmesan cheese, to serve
Heat 3 tablespoons of oil in a large pan over medium-high heat.
Fry the chopped garlic, anchovies, and chili for 3 minutes
Add the zucchini and cook for 6 minutes, stirring occasionally. ADD the capers and black olives and cook a further minute.
Add the tomatoes, salt, and pepper, bring to the boil, reduce the heat to medium-low and cook, uncovered, for 8 minutes.
While the sauce simmers, cook the pasta in a large pot of lightly salted boiling water according to package directions.
Add the tuna and basil to the sauce and cook for 2 minutes.
remove the sauce from the heat then stir through the remaining 2 tablespoons of oil.
Drain the pasta and toss with the sauce.
Serve sprinkled with Parmesan cheese.
