Avocado toast these days, well, it’s gone mainstream, well thanks to all the hipsters. I hate to say this but this wonderful fruit could get rarer that no more avocados to be found and more expensive days ahead. However, avocado toast can go much further than the simple toppings of olive oil, lemon and sea salt. In fact, avocado toast is so versatile, you can eat it every day for the rest of your life and always have a new recipe to try!
And today is my second day of detox, I must admit going to the grocery is no fun anymore. Gone are the days where I can just put everything in my grocery cart and say yeah who cares I am a cook, vlogger “content creator” (weird to say that LOL) and a blogger and I do this for a living. And it took me years to be able to admit that this is the thing I want to do in life. I realized after gaining 4 kilos in the span of a month, that I need to have balance in life.
I have been doing a lot of “no cooking” cooking lately. The kind of cooking that doesn’t require stove, oven or very much work. And this toast is with spinach and tangy goat cheese and of course, the smoothness and the creaminess of the avocado with oozing poached egg on top is a power packed lunch and the highligh of the day is me perfecting my poached egg but that is a different story to tell.

Avocado Toast with Spinach, Goat Cheese and Poached EggPrint Recipe
- 1 cup packed spinach leaves
- 1 large egg
- Salt and black pepper, to taste
- 1 slice toasted bread
- 1/2 avocado, pit and skin removed, thinly slice
- 2 tbsp goat cheese
- 1/4 cup vinegar
For the poached egg, it is very important to use fresh eggs. Cracked the egg in a tea strainer over a cup so that all the watery bits from the egg will go underneath. Put in into another cup and set aside.
Boil water and add the vinegar very important that when the water is already boiling put the stove in a low heat and finally drop the eggs, cooked for 2 minutes once cooked set aside.
Meanwhile, cook the spinach on butter till its wilted set-aside
Now its time for assembly, smear some goat cheese to the toasted bread, add the spinach, thinly sliced avocado and top with the poached egg
add salt and pepper to taste.
